Sustainability / Our Producers

Suffolk is a county that is replete with fantastic local produce and suppliers. We are lucky enough to source approximately 70% of our food within 38 miles and below is a list just some of the wonderful people who supply us with their fresh produce. We try where possible to use sustainable ingredients and we recycle most of our waste. We bake our own bread, make most of our pasta and are a firm believer in nose to tail ‘whole beast’ butchery.

Pinneys of Orford- local fish and lobsters
Rare Breeds, Coggleshall – organic meat
Local game from Rendlesham forest – just up the road
Fen Farm, Bungay – butter and cheese
Our ‘Lin” – is both a very local customer, who lives just down the road and is also a supplier of organic vegetables, tomatoes and soft fruits.

Locally foraged mushrooms (such as porcini , puffballs) and wild garlic either picked by the kitchen team or supplied by whoever happens to walk through the door with the goodies.
Low Farm, Huntingfield – eggs

Tosier Chocolate – Middleton
Racalia Sicilian organic olive oil – owned and produced by the Lowther- Pinkertons from Alderton
Colchester Oyster Fishery – Mersea oysters and crabs
Anglia Produce – vegetables
Hamish Johnstone, Martlesham – other English cheeses

Rick the Fish- day boats off Shotley, Harwich and Mersea

Buffy (another customer) who supplies quinces from her garden
